Hass
The Hass avocado is beloved for its rich, buttery flavor. It delivers a large percentage of flesh, due to the fruit’s smaller seed, making it easy to peel and scoop. The Hass has a pebbly exterior and thick, leathery skin that turns black when ripe.

GEM
GEM avocados are very similar to Hass. They’re easy to peel and scoop, with a creamy texture, pleasantly nutty flavor, and medium-sized seed. GEMs have a gold speckled skin that turns black when ripe.

Lamb Hass
Developed by the University of California’s avocado breeding program in the mid-’90s, Lamb Hass is popular due to its large size, high yield, and excellent taste. It features a thick, pebbly skin that turns black when ripe, similar to Hass.
